The oval shells themselves are crafted on site using our signature, and sustainably sourced, dark chocolate, beautifully tempered by our expert chocolatiers. This gives the chocolates their stunning shiny exterior and deliciously chocolate-y ‘bite’. The top is decorated with an ornate cocoa-butter design for an exquisite finish.
The filling for these delicious orange and Cointreau truffles is made using a blend of our rich signature dark chocolate, single origin dark chocolate made using cocoa from Madagascar and an oat-based cream alternative. This smooth, rich ganache is flavoured with homemade Seville marmalade and a generous splash of Cointreau.
(Aside... prior to Henley Chocolates I (Sally) made cakes and baked goods for a local Country Market while pregnant with my son. Country Markets are made up of an inspirational collection of (mainly female) life-long home cooks, gardeners and crafters. Hence, it was only natural to me to return to the Country Market to source genuinely homemade marmalade for these chocolates.
Available freshly picked and harvested in January and February only, juicy Seville oranges are made into a chunky cut marmalade by local Country Market home cooks during these winter months. Each jar of marmalade is crafted from traditional recipes with years of experience.)
The centres are piped while still warm into their dark chocolate shells and left to cool. Once the ganache has cooled, the centres are sealed with a layer of chocolate ready to be lovingly packaged and sent to you.
