Passion fruit, Orange and Raspberry truffles hand rolled in ruby chocolate
These truffles are hand rolled in the highly sought after ruby chocolate: the fourth type of chocolate (after milk, dark and white). Ruby chocolate is made from naturally occurring ruby cocoa beans found in Ecuador, Brazil and Ivory Coast which give it its glorious ruby pink colour. This revolutionary new developement by Barry Callebaut was only revealed to the world in China 2017 and has sinceexcited chocolatiers across the globe.
It is described as 'subtly tart, rich with sweet red berry notes and wonderfully smooth' although no fruit or berries are used to make it.
To compliment the rich dark chocolate shell, each truffle is filled with a deliciously fruity orange, raspberry and passion fruit ganache, before being hand rolled in creamy ruby chocolate. (We add a splash of Passoa, a passion fruit liqueur, to the ganache for extra fruity class).
As with all our chocolates these truffles are made by hand. We melt and pre-crystallise the chocolate to make it ready to work with and then pour the tempered ruby lusciousness into moulds, pipe with ganache and seal with further ruby chocolate. The finished truffles have a shiny pink domed appearance, which we think looks stunning.
**NEW for 2019 we are pleased to be able to offer you these delicious truffles in more environmentally-friendly, biodegradable packaging. The truffles will come to you in a stylish ballotin card box, with each box holding eight chocolates. Each box has an approximate net weight of 90g.**
The chocolates contain milk and soy lecithin (a naturally derived ingredient used as an emulsifier to give the chocolate it's luscious taste).
